PROJECT DESCRIPTION
Pinkerton’s Barbecue has officially brought new life to the historic 59 Diner at 3801 Farnham Street, transforming the long-standing Houston landmark into a vibrant, reimagined destination in the Upper Kirby area. As the third location for Pinkerton’s—joining the original Heights restaurant and the San Antonio outpost—the completed project reflects both the brand’s continued growth and its deep Texas roots.

Led by Houston native Grant Pinkerton, the new restaurant showcases a refined evolution of his craft. The space is anchored by the signature offset steel barrel pits while incorporating expanded capabilities, including whole-hog cooking inspired by traditions from Mississippi and Tennessee. The result is a dynamic, full-scale barbecue experience that builds on Pinkerton’s established reputation while introducing new flavors and techniques.

The design thoughtfully preserves the nostalgic character of the original diner, blending it with modern interventions that enhance functionality, flow, and guest experience. Warm materials, updated interiors, and an inviting atmosphere create a space that feels both familiar and fresh—honoring the site’s history while establishing a bold new identity.

Now complete, Pinkerton’s Barbecue stands as a successful adaptive reuse project that celebrates Houston’s culinary heritage, reinforces a sense of place, and delivers a lively, authentic destination for the community.
